- 4 boneless, skinless chicken breasts
- 1/2 tablespoon olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
- 24 ounces marinara sauce (1 jar)
- 4 slices thick-cut mozzarella cheese
- 30 slices pepperoni
- 1 cup freshly shredded mozzarella cheese
- 1/8 cup freshly grated Parmesan cheese
Instructions
- Preheat and Prep: Preheat oven to 400ยฐF (200ยฐC). Spray a large baking dish with nonstick spray.
- Season Chicken: In a bowl, whisk together olive oil, salt, pepper, garlic powder, and Italian seasoning. Butterfly each chicken breast by cutting โ of the way through horizontally. Rub the seasoning mix all over the chicken breasts.
- Layer in Baking Dish: Spread half of the marinara sauce in the baking dish.
- Stuff Chicken: Open each butterflied chicken breast. Place a slice of mozzarella inside, top with 5 slices of pepperoni, a spoonful of marinara, and a sprinkle of Parmesan cheese. Close the chicken breast (secure with toothpicks if needed) and place in the baking dish. Repeat with all four chicken breasts.
- Top with Sauce and Cheese: Cover the chicken breasts with the remaining marinara sauce. Top with shredded mozzarella, remaining pepperoni, and remaining Parmesan cheese. Sprinkle with additional Italian seasoning, if desired.
- Bake: Bake for 25 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC).
Notes
- You can use any type of cheese you like for the filling, such as provolone or Monterey Jack.
- If you donโt have thick-cut mozzarella cheese, you can use regular mozzarella slices.
- Serve with a side salad or your favorite vegetables for a complete meal.
