 This Pepperoni Pizza Stuffed Chicken Bake is a fun and flavorful twist on classic pizza! Tender chicken breasts are butterflied and stuffed with gooey mozzarella cheese, pepperoni slices, and marinara sauce, then baked to perfection. Itโ€™s a creative and satisfying meal thatโ€™s perfect for pizza lovers.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 24 ounces marinara sauce (1 jar)
  • 4 slices thick-cut mozzarella cheese
  • 30 slices pepperoni
  • 1 cup freshly shredded mozzarella cheese
  • 1/8 cup freshly grated Parmesan cheese

Instructions

  1. Preheat and Prep: Preheat oven to 400ยฐF (200ยฐC). Spray a large baking dish with nonstick spray.
  2. Season Chicken: In a bowl, whisk together olive oil, salt, pepper, garlic powder, and Italian seasoning. Butterfly each chicken breast by cutting โ…” of the way through horizontally. Rub the seasoning mix all over the chicken breasts.
  3. Layer in Baking Dish: Spread half of the marinara sauce in the baking dish.
  4. Stuff Chicken: Open each butterflied chicken breast. Place a slice of mozzarella inside, top with 5 slices of pepperoni, a spoonful of marinara, and a sprinkle of Parmesan cheese. Close the chicken breast (secure with toothpicks if needed) and place in the baking dish. Repeat with all four chicken breasts.
  5. Top with Sauce and Cheese: Cover the chicken breasts with the remaining marinara sauce. Top with shredded mozzarella, remaining pepperoni, and remaining Parmesan cheese. Sprinkle with additional Italian seasoning, if desired.
  6. Bake: Bake for 25 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC).

Notes

  • You can use any type of cheese you like for the filling, such as provolone or Monterey Jack.
  • If you donโ€™t have thick-cut mozzarella cheese, you can use regular mozzarella slices.
