For the Bread:
- 3/4 cup granulated sugar (150 grams)
- 1/2 cup 2% milk (4 ounces)
- 1/2 cup canola oil (vegetable or coconut oil)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour (260 grams)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups diced fresh peaches
For the Glaze:
- 2 cups powdered sugar
- 2 tablespoons melted butter
- 1/3 cup finely diced peaches (peeled and drained of any extra juice)
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons heavy cream or milk (optional)
Instructions
- Preheat oven: Preheat your oven to 350ºF (175ºC) to prepare for baking the peach bread.
- Mix wet ingredients: In a medium bowl, combine the granulated sugar, 2% milk, canola oil, egg, and vanilla extract. Stir well until the mixture is smooth and uniform.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt until evenly mixed.
- Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined without overmixing to ensure a tender bread.
- Fold in peaches: Carefully fold the 2 cups of diced fresh peaches into the batter without breaking them up to distribute peaches evenly.
- Prepare pan and bake: Grease a 9″x5″ bread pan and pour in the batter. Bake in the preheated oven for 55 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
- Cool bread: Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely before glazing.
- Make the glaze: In a small bowl, mix together the powdered sugar, melted butter, finely diced peaches, and vanilla extract. Stir until smooth. If needed, add 1 to 2 tablespoons of heavy cream or milk gradually to reach a drizzleable consistency.
- Glaze and serve: Once the bread is completely cool, spread the glaze evenly on top. Slice the peach bread into 10 pieces and serve.
- Storage: Store leftover bread in an airtight container in the refrigerator to maintain freshness.
Notes
- The glaze may appear thick initially; continuous stirring helps it become smooth and creamy.
- Add milk or heavy cream sparingly to avoid over-thinning the glaze.
- The glaze softens over time as sugar draws juice from the peaches, so it’s best to add dairy liquids cautiously.
- Calories and nutrition are estimated based on dividing the bread into 10 slices, including the glaze.
- Use fresh, ripe peaches for optimal flavor and texture.
