Description

This Parmesan Garlic Chicken Mac and Cheese is a creamy and cheesy slow cooker meal! Tender chicken, coated in a flavorful parmesan garlic sauce, is combined with macaroni, a rich cheese sauce, and finished with a sprinkle of Parmesan cheese and parsley. It’s a comforting and satisfying dish that’s perfect for a busy weeknight.


Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Buffalo Wild Wings Parmesan Garlic Sauce
  • 8 oz elbow macaroni noodles
  • 2 cups whole milk
  • 2 1/2 cups shredded Colby Jack cheese
  • 8 oz cream cheese, softened
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook Chicken: Season chicken with salt, pepper, paprika, and garlic powder. Place in the slow cooker and add enough Parmesan Garlic Sauce to coat. Cook on low for 4 hours, or until chicken reaches 165°F (74°C). Shred or chop chicken and return to the slow cooker. Add more sauce if desired.
  2. Par-Cook Pasta: Cook macaroni in boiling water for 3 minutes. Drain and set aside.
  3. Slow Cook Mac and Cheese: Add par-cooked macaroni, milk, Colby Jack cheese, and cream cheese to the slow cooker with the chicken. Stir well. Cook on low for 1 hour, stirring occasionally.
  4. Serve: Top with grated Parmesan cheese and fresh parsley. Serve hot.

Notes

  • You can use boneless, skinless chicken thighs instead of breasts, but adjust cooking time as needed.
  • If you don’t have Buffalo Wild Wings Parmesan Garlic Sauce, you can use another brand or make your own.
  • For a thicker sauce, you can whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) towards the end of the cooking time.
