Description

Delightful and easy-to-make Orange Coconut Snowballs combine the zesty brightness of orange juice concentrate with the rich nuttiness of pecans and vanilla wafers, all rolled in coconut flakes for a chewy, sweet treat perfect for any occasion.

Crust and Nuts

  • 1 12oz box vanilla wafer cookies (see notes)
  • 1 1/4 cup pecans
  • 2 cups coconut flakes (sweetened or unsweetened depending on your preference)

Mixing Ingredients

  • 2 cups powdered sugar
  • 3/4 cup orange juice concentrate, mostly thawed (about 6 oz)
  • 1/2 tsp vanilla extract
  • 1 stick unsalted butter, softened


Instructions

  1. Prepare the crumbs. In a food processor, pulse the vanilla wafers until they become a very fine crumb. Transfer these crumbs to a large mixing bowl. Then, pulse the pecans into a fine crumb and add them to the same bowl with the vanilla wafer crumbs. Next, pulse the coconut flakes in the food processor until they are coarsely chopped, and transfer these chopped coconut flakes to a separate shallow dish for rolling later.
  2. Mix the dough. To the bowl with the pecan and wafer crumbs, add the powdered sugar, orange juice concentrate, vanilla extract, and softened unsalted butter. Using a hand mixer, blend all these ingredients together until they form a well-combined dough.
  3. Form and coat the snowballs. Using a small cookie scoop, portion out the dough and then shape each portion into a ball with your hands. Roll each ball thoroughly in the chopped coconut flakes to coat, then place the coated snowballs onto a cookie sheet.
  4. Chill and store. Place the cookie sheet with the formed snowballs in the refrigerator and chill until the snowballs are firm. Once firm, transfer them to an airtight container for storage. Keep any leftovers refrigerated to maintain freshness.

Notes

  • If you can only find 11oz boxes of vanilla wafers, you can add 2-3 sheets of graham crackers to make up the difference.
  • Alternatively, you can use an extra 1/3 cup of powdered sugar, but this will increase the sweetness of the recipe.
  • You could also buy two boxes to get the extra ounce of wafers and use the leftovers to make banana pudding.
