For the Salad:
- 1 1/2 pounds beets, cooked, peeled, and diced
- 1/3 cup red onion, finely chopped
- 1 garlic clove, minced
- 4 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 orange (zest and juice)
- 1/2-1 cup craisins
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup cilantro, chopped
- 1/2-1 cup pistachios
- 1 cup feta cheese, cubed
- Optional: pomegranate seeds for garnish
Instructions
- Prepare the Beets: Cook, peel, and dice the beets.
- Assemble the Salad: Combine all ingredients in a large bowl.
- Adjust and Serve: Taste and adjust seasoning as needed.
Boil, roast, or steam beets until tender. Dice into small cubes.
