 This One-Pot Smoked Sausage, Green Beans, and Potatoes is a simple and hearty meal thatโ€™s perfect for a quick and easy dinner! Smoked sausage, tender potatoes, and crisp green beans are cooked together in one pot, creating a flavorful and satisfying dish with minimal cleanup.


Ingredients

  • 14 ounces smoked sausage (see notes)
  • 2 tablespoons butter
  • 2 pounds yellow potatoes (Yukon Gold recommended), about 4-6 medium
  • 1/2 teaspoon paprika (smoked paprika preferred)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound green beans, fresh, rinsed, and trimmed
  • 1 1/2 cups low-sodium chicken broth

Instructions

  1. Prep Ingredients: Slice smoked sausage into ยฝ-inch rounds. Dice onion. Cut potatoes into 1-inch chunks.
  2. Mix Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.
  3. Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat over medium-high heat. Add sausage and cook, stirring, until browned, about 4-5 minutes. Remove and set aside.
  4. Sautรฉ Potatoes: Add butter to the pot over medium-high heat. Add potatoes and half of the seasoning mixture. Cook, stirring occasionally, until potatoes start to brown, about 5-6 minutes.
  5. Add Green Beans and Broth: Add green beans to the pot. Add the remaining seasoning and mix with potatoes. Pour chicken broth over green beans.
  6. Cook: Cover and reduce heat to medium. Cook for 15 minutes, or until potatoes and green beans are tender.
  7. Combine and Serve: Add the sausage back to the pot, mix well, and serve.

Notes

  • Use any type of smoked sausage (chicken, turkey, beef, or pork).
  • Four-packs of smoked sausage may be slightly less than 14 ounces, but it wonโ€™t drastically affect the recipe.
  • To reduce sodium, use low-sodium sausage.
  • Frozen or canned green beans can be used, adjust cooking times if needed.
