- 14 ounces smoked sausage (see notes)
- 2 tablespoons butter
- 2 pounds yellow potatoes (Yukon Gold recommended), about 4-6 medium
- 1/2 teaspoon paprika (smoked paprika preferred)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound green beans, fresh, rinsed, and trimmed
- 1 1/2 cups low-sodium chicken broth
Instructions
- Prep Ingredients: Slice smoked sausage into ยฝ-inch rounds. Dice onion. Cut potatoes into 1-inch chunks.
- Mix Seasoning: In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.
- Brown Sausage: Spray a Dutch oven or deep pan with cooking spray and heat over medium-high heat. Add sausage and cook, stirring, until browned, about 4-5 minutes. Remove and set aside.
- Sautรฉ Potatoes: Add butter to the pot over medium-high heat. Add potatoes and half of the seasoning mixture. Cook, stirring occasionally, until potatoes start to brown, about 5-6 minutes.
- Add Green Beans and Broth: Add green beans to the pot. Add the remaining seasoning and mix with potatoes. Pour chicken broth over green beans.
- Cook: Cover and reduce heat to medium. Cook for 15 minutes, or until potatoes and green beans are tender.
- Combine and Serve: Add the sausage back to the pot, mix well, and serve.
Notes
- Use any type of smoked sausage (chicken, turkey, beef, or pork).
- Four-packs of smoked sausage may be slightly less than 14 ounces, but it wonโt drastically affect the recipe.
- To reduce sodium, use low-sodium sausage.
- Frozen or canned green beans can be used, adjust cooking times if needed.
