Ingredients

  • 1 celery stalk, finely diced
  • 1 pound ground beef (extra lean, if preferred)

  • 1/2 teaspoon dried basil
  • Salt and black pepper, to taste
  • 2 tablespoons tomato paste
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 3 cups low-sodium or no-sodium beef broth
  • 1 cup orzo pasta
  • 1 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Instructions

  1. Sautรฉ Vegetables and Brown Beef: Heat olive oil in a large pot or skillet over medium heat. Sautรฉ onion, garlic, carrot, and celery until softened. Increase heat to medium-high, add ground beef, and cook until browned. Season with oregano, basil, salt, and pepper.
  2. Add Tomato and Broth: Stir in tomato paste, then add diced tomatoes with their juice. Pour in beef broth and bring to a boil.
  3. Simmer with Orzo: Stir in orzo pasta. Reduce heat, cover, and simmer for about 10 minutes, or until orzo is tender and most of the liquid is absorbed. Stir occasionally.
  4. Finish and Serve: Remove from heat and stir in Parmesan cheese until melted and creamy. Ladle into bowls and garnish with fresh basil.
