- 3–4 cups potatoes, peeled and thinly sliced or cut into 3/4-inch chunks
- 2 cups fresh mushrooms, sliced
- 1 medium onion, sliced
- 1 tablespoon minced garlic
- 2 (10 3/4-ounce) cans condensed cream of mushroom, celery, or tomato soup
- 1 cup broth (vegetable, chicken, or beef)
- 1/2 cup heavy cream
- 1 tablespoon paprika
- Salt and pepper, to taste
- 1–2 tablespoons olive oil
- Cooking spray
Topping:
- 2 cups shredded cheese
- 1 cup crispy fried onions
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat and Prep: Preheat oven to 350°F (177°C). Grease a 13×9 inch baking dish with cooking spray.
- Sauté Vegetables and Brown Meat: In a large skillet, sauté onions, mushrooms, and garlic in olive oil. Add ground meat and cook until browned. Drain excess grease.
- Make Sauce: In a bowl, whisk together condensed soup, broth, heavy cream, paprika, salt, and pepper.
- Layer Casserole: In the prepared baking dish, layer half of the potatoes, half of the soup mixture, half of the meat mixture, and half of the shredded cheese. Repeat layers.
- Bake: Cover with greased foil or a lid and bake for 90 minutes, or until potatoes are tender.
- Broil and Serve: Uncover and broil to brown the cheese, if desired. Let rest for 10-15 minutes before serving.
