  • 2 cups fresh mushrooms, sliced

  • 2 (10 3/4-ounce) cans condensed cream of mushroom, celery, or tomato soup
  • 1 cup broth (vegetable, chicken, or beef)
  • 1/2 cup heavy cream
  • 1 tablespoon paprika
  • Salt and pepper, to taste
  • 12 tablespoons olive oil
  • Cooking spray

Topping:

  • 2 cups shredded cheese
  • 1 cup crispy fried onions
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat and Prep: Preheat oven to 350°F (177°C). Grease a 13×9 inch baking dish with cooking spray.
  2. Sauté Vegetables and Brown Meat: In a large skillet, sauté onions, mushrooms, and garlic in olive oil. Add ground meat and cook until browned. Drain excess grease.
  3. Make Sauce: In a bowl, whisk together condensed soup, broth, heavy cream, paprika, salt, and pepper.
  4. Layer Casserole: In the prepared baking dish, layer half of the potatoes, half of the soup mixture, half of the meat mixture, and half of the shredded cheese. Repeat layers.
  5. Bake: Cover with greased foil or a lid and bake for 90 minutes, or until potatoes are tender.
