For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons avocado oil or olive oil

- 1 (15-ounce) can crushed tomatoes
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano (or Italian seasoning)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Prepare Chicken: Butterfly each chicken breast by slicing horizontally, almost all the way through. In a bowl, combine dried basil, oregano, garlic powder, salt, onion powder, and pepper. Season the outside of the chicken breasts with the spice mixture.
- Stuff and Sear: Fill the chicken breasts with mozzarella cheese and secure with toothpicks, if needed. Heat oil in a large skillet over medium-high heat. Sear chicken breasts until golden brown on one side.
- Make Sauce and Simmer: While chicken sears, combine crushed tomatoes, minced garlic, oregano, salt, and pepper in a bowl. Pour the tomato sauce around the chicken in the skillet. Bring to a simmer, reduce heat to medium, cover, and cook for 8-10 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- Serve: Garnish with fresh parsley and adjust salt and pepper to taste.

- You can use other types of cheese for the filling, such as provolone, Monterey Jack, or a blend.
- If you don’t have fresh parsley, you can use dried parsley for garnish.
