    • 4 boneless, skinless chicken breasts
    • 1 teaspoon dried basil
    • 1 teaspoon dried oregano
    • 1 teaspoon garlic powder
    • 1 teaspoon salt
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon black pepper
    • 1 1/2 cups shredded mozzarella cheese
    • 2 tablespoons avocado oil or olive oil
  • For the Sauce:

    • 1 (15-ounce) can crushed tomatoes
    • 1 tablespoon minced garlic
    • 1 teaspoon dried oregano (or Italian seasoning)
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare Chicken: Butterfly each chicken breast by slicing horizontally, almost all the way through. In a bowl, combine dried basil, oregano, garlic powder, salt, onion powder, and pepper. Season the outside of the chicken breasts with the spice mixture.
  2. Stuff and Sear: Fill the chicken breasts with mozzarella cheese and secure with toothpicks, if needed. Heat oil in a large skillet over medium-high heat. Sear chicken breasts until golden brown on one side.
  3. Make Sauce and Simmer: While chicken sears, combine crushed tomatoes, minced garlic, oregano, salt, and pepper in a bowl. Pour the tomato sauce around the chicken in the skillet. Bring to a simmer, reduce heat to medium, cover, and cook for 8-10 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  4. Serve: Garnish with fresh parsley and adjust salt and pepper to taste.

Notes

  • You can use other types of cheese for the filling, such as provolone, Monterey Jack, or a blend.
  • If you don’t have fresh parsley, you can use dried parsley for garnish.
