- 1 small green bell pepper, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 packet taco seasoning
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 2 cups beef broth
- 1 (16 ounce) jar salsa
- 1 (8 ounce) can tomato sauce
- 1 cup long-grain white rice
- 2 cups freshly shredded Colby Jack cheese, divided
- Fresh chopped cilantro, for serving
- Your favorite taco toppings
Instructions
- Brown Beef and Season: In a large skillet with deep sides, brown ground beef with bell pepper and onion over medium heat. Drain excess grease. Stir in garlic and cook until fragrant. Add taco seasoning and mix well.
- Simmer with Rice: Add black beans, corn, beef broth, salsa, and tomato sauce to the skillet. Bring to a boil. Stir in rice, reduce heat to low, cover, and simmer for 25-30 minutes, or until rice is tender and liquid is absorbed. Stir occasionally to prevent sticking.
- Melt Cheese: Remove from heat and stir in half of the cheese. Sprinkle the remaining cheese on top, cover, and let it melt.
- Serve: Garnish with fresh cilantro and serve with your favorite taco toppings.
