For the Pizza Base
- 6 medium flour tortillas
- 15 ounces refried beans
For the Beef Filling
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons oil, divided
- 12 ounces ground beef
- 1 tablespoon taco seasoning
Toppings
- 1/2 cup enchilada sauce
- 1 cup mozzarella cheese
- 1 cup Mexican shredded cheese
- 1/2 cup tomatoes, diced
- 2 tablespoons black olives
- 1/2 large green bell pepper, diced
Instructions
- Prepare the Ground Beef Mixture
In a non-stick pan, heat 1 tablespoon of oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant. Add the ground beef and taco seasoning, stirring occasionally, until the beef is browned and no longer pink. Set aside. - Preheat the Oven
Preheat your oven to 200ยฐC (400ยฐF). Line two large baking sheets with parchment paper for easy cleanup. - Crisp the Tortillas
Heat the remaining 1 tablespoon of oil in another pan. Crisp up the tortillas on both sides until golden brown. This will give them a delicious texture as the base for the pizza. - Assemble the Pizza
On a prepared baking sheet, lay one tortilla as the base. Spread a generous layer of refried beans over the tortilla, followed by adding some of the ground beef mixture. Place a second tortilla on top, spread a layer of enchilada sauce, and sprinkle with 1/3 of both the mozzarella and Mexican shredded cheeses (be sure to leave a small border around the edge to prevent cheese from spilling out). Repeat this process for the remaining tortillas. - Bake the Pizza
Place the assembled pizzas in the preheated oven. Bake for 10-12 minutes, or until the cheese has fully melted and is bubbly. - Add Fresh Toppings
Remove the pizzas from the oven. Garnish with diced tomatoes, sliced olives, and chopped bell peppers. Optionally, serve with a dollop of sour cream on top for added flavor.

- Storage:ย For best results, serve immediately out of the oven. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; however, the tortillas may become soggy. To avoid this, store fresh toppings separately until ready to eat.
- Reheating:ย Reheat leftover pizzas in a 375ยฐF oven on a parchment-lined tray until the tortillas become crisp and the cheese remelts.
- Air Fryer Option:ย Place the pizza in a preheated air fryer at 400ยฐF for 4-6 minutes for a quick and crispy warm-up.
