Description

This flavorful Mexican Garlic Shrimp (Camarones al Mojo de Ajo) combines tender, succulent shrimp cooked in a fragrant garlic and spice marinade, finished with fresh lime juice and herbs, making it a perfect quick and delicious seafood dish.

Ingredients

Units Scale

For the Shrimp

  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 1-2 jalapeno peppers, sliced (serranos recommended for more spice)
  • 6 cloves garlic, minced
  • 3 tablespoons butter (or more as desired)
  • 1 pound shrimp, peeled and deveined (tails on)
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons dry white wine
  • Juice from 1 small lime
  • 1 teaspoon lime zest

For Serving

  • 2 tablespoons chopped fresh parsley or cilantro
  • Red pepper flakes

Instructions

  1. Heat the oil: Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Sauté vegetables: Add the sliced onion and jalapenos; cook for about 5 minutes until softened.
  3. Add garlic: Stir in the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  4. Melt butter: Add the butter to the pan and let it melt, combining with the garlic and vegetables.
  5. Season and cook shrimp: Toss the peeled and deveined shrimp with paprika, cumin, salt, and pepper. Add the seasoned shrimp to the skillet along with white wine. Cook for 6-7 minutes, stirring occasionally, until shrimp turn pink and are cooked through.
  6. Add lime: Stir in lime juice and lime zest, cooking for an additional minute.
  7. Garnish and serve: Remove from heat, garnish with chopped parsley or cilantro and red pepper flakes. Serve immediately.

Notes

  • Feel free to adjust the spice level by adding more or fewer jalapenos or red pepper flakes.
  • For a richer flavor, you can add a splash of tequila instead of white wine.
  • Serve this dish with warm tortillas, rice, or a side salad for a complete meal.
  • Make sure not to overcook the shrimp to keep them tender.
  • Fresh lime juice enhances the flavor and brightness of the dish.
