For Steak Bites:

  • 1.5 lb steak, cut into bite sized pieces approx. 1 1/2 in. cubes
  • 2-3 tbsp olive oil
  • 1/2 tbsp fresh thyme, finely chopped (or 3/4 tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • 1 tsp dried oregano
  • 2 garlic cloves, minced
  • 2 tsp lemon juice
  • 1/2 tsp sea salt
  • 1/2 tsp freshly cracked pepper
  • 1/3 cup feta cheese
  • 1 cup grape tomatoes, halved

For the Yogurt Sauce:

  • 1/2 cup plain Greek yogurt
  • 1-2 garlic cloves, minced
  • 1 tsp lemon juice
  • 2 tsp olive oil
  • 1 tbsp chopped dill (or 1-2 tsp dried)
  • Salt, to taste


Instructions

  1. Prepare Marinade and Marinate Steak: In a medium bowl or large Ziploc bag, whisk together olive oil, minced garlic, oregano, thyme, rosemary, lemon juice, salt, and pepper until well combined. Add the steak bite-sized pieces to the mixture, ensuring each piece is thoroughly coated. Seal or cover and marinate in the refrigerator for at least 30 minutes, though marinating several hours or overnight will enhance flavor.
  2. Cook Steak Bites: Heat a cast iron or nonstick skillet over medium-high heat. Add the marinated steak along with any remaining olive oil from the marinade to the hot skillet. Allow the steak bites to sear for 2-3 minutes per side without moving them too often to develop a nice crust. For more well-done bites, cook an additional 2-4 minutes. Remove the skillet from heat once cooked to your liking.
  3. Toss Tomatoes and Add Feta: While the skillet is still hot, add the halved grape tomatoes to the pan and gently toss them with the steak bites, allowing them to warm through slightly. Sprinkle crumbled feta cheese over the steak bites and tomatoes before serving.
  4. Make Yogurt Sauce: In a small bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill, and salt to taste. Stir well until the sauce is smooth and flavors meld. Chill until ready to serve.

Notes

  • Marinate the steak bites as long as possible to maximize flavor. Even a short 10-minute marinade will work, but several hours or overnight is best for tender, flavorful meat.
