Description

A vibrant and fresh mango salad that combines the perfect balance of sweet and tangy flavors in a sweet chilli lime dressing. This colorful dish is packed with juicy mangoes, creamy avocado, crunchy peanuts, and fresh herbs, making it a perfect choice for a refreshing side dish or a light meal.


Ingredients

Sweet Chilli Lime Dressing

  • 3 tbsp sweet chilli sauce
  • Juice of 2 limes
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup
  • 1/2 tsp freshly grated ginger
  • Sea salt flakes, to taste
  • Cracked black pepper, to taste

Salad

  • 2 ripe mangoes, peeled and diced
  • 1 avocado, peeled, pitted, and diced
  • 1/2 small red onion, finely sliced
  • 1 small cucumber, halved lengthways, then sliced
  • 1 cup (30g) coriander (cilantro) leaves, roughly chopped
  • 1/4 cup (40g) crushed peanuts

Instructions

  1. Make the Dressing
    In a small bowl, whisk together the sweet chilli sauce, lime juice, olive oil, honey (or maple syrup), and freshly grated ginger until well combined. Season with sea salt and cracked pepper to taste. Set aside.
  2. Prepare the Salad Ingredients
    In a shallow serving bowl, layer the diced mango, sliced cucumber, diced avocado, red onion, and chopped coriander (cilantro) in that order for a visually stunning presentation.
  3. Dress the Salad
    Drizzle the prepared sweet chilli lime dressing over the salad. Sprinkle with crushed peanuts to add crunch. Gently toss the salad just before serving to evenly coat all the ingredients while maintaining its colorful appeal.

Notes

  • Make Ahead:
  • Dressing: The dressing can be prepared up to 3 days in advance and stored in an airtight container in the fridge.
  • Salad Ingredients: Assemble all the ingredients except the avocado and store them separately in the refrigerator. Add avocado just before serving to keep it fresh.
  • Leftovers: Store leftover salad in an airtight container in the refrigerator for up to 1 day. Note that the avocado may slightly brown but will still taste delicious. Freezing is not recommended.
