Mango Lassi Popsicles Ingredients:
- 2 large mangoes
- 1 cup Greek yogurt (divided; one-third for the mango mixture and two-thirds for the yogurt mixture)
- 1 cup Homemade Simple Syrup
Instructions
- To Prepare the Mango and Yogurt Mixtures: Peel and chop mangoes, blend with 1 tbsp of simple syrup until creamy. Mix one-third of yogurt with mango puree and remaining simple syrup. Whisk together the rest of the yogurt and simple syrup.
- To Make the Popsicles: Alternate layers of mango and yogurt mixtures in popsicle molds. Freeze for 4-5 hours.
- To Serve: Run molds under hot water to release popsicles. Enjoy!
Notes
- For better marbling, chill the mixtures before layering in molds.
- Store any leftovers in molds in the freezer for up to 6 weeks.
