Description

These Lucky Charms Rice Krispie Treats combine the magical marshmallows of Lucky Charms with the classic crispy texture of Rice Krispies for a colorful and fun twist on a beloved treat. Easy to make with a microwave, these green-hued sweets are perfect for St. Patrick’s Day or any occasion that calls for a whimsical dessert.

Ingredients

Scale

Cereal

  • 5 cups Lucky Charms Cereal, plus extra marshmallows for topping
  • 4 cups Rice Krispies Cereal

Other Ingredients

  • 1 (10.50 oz) bag mini marshmallows
  • 5 teaspoons salted butter
  • Green gel food coloring

Instructions

  1. Prepare baking dish: Butter a 9×13-inch baking dish thoroughly and set it aside to prevent sticking.
  2. Melt marshmallows: In a microwave-safe bowl, microwave the mini marshmallows in 20-second increments twice, stirring in between, until they are partially melted but not fully liquefied.
  3. Melt butter: In a separate microwave-safe bowl, melt the salted butter in 20-second increments until almost completely melted.
  4. Combine butter and marshmallows: Add the melted butter to the marshmallows and microwave the mixture for 20 more seconds to help everything meld together.
  5. Mix well and color: Stir the combined marshmallow and butter mixture thoroughly. Add green gel food coloring and mix until evenly colored.
  6. Add cereals: Stir in the Rice Krispies cereal first, mixing until fully coated. Then add the Lucky Charms cereal, stirring gently until all pieces are coated with the marshmallow mixture.
  7. Press into dish: Using a buttered rubber spatula, evenly press the mixture into the prepared baking dish to form a compact layer.
  8. Add extra marshmallows: Sprinkle additional Lucky Charms marshmallows on top as a decorative and tasty topping.
  9. Chill: Refrigerate the treats for 30 minutes to set and firm up.
  10. Serve: Cut into 12 squares for standard portions or 8 larger squares if preferred, and enjoy!

Notes

  • It’s okay if the butter isn’t fully melted before mixing; it will melt as you combine with the marshmallows.
  • Add the green food coloring to the marshmallows before adding the cereals to achieve a more precise and vibrant green color.
  • Microwaves vary in power, so watch the melting times carefully and adjust as needed to prevent burning.
  • Press the cereal mixture firmly into the pan to help the treats hold together better.
