These Kielbasa Cowboy Beans are a hearty and flavorful side dish that’s perfect for any barbecue or potluck! Smoked kielbasa, ground beef, bacon, and a medley of vegetables are simmered in a sweet and smoky sauce with baked beans. This easy recipe is sure to be a crowd-pleaser!


Ingredients

  • 1 ring (13.9 ounces) kielbasa, sliced into 1/2-inch rounds
  • 1 pound ground beef
  • 1 medium yellow onion, diced (approximately 1 cup)
  • 1 green bell pepper, diced (approximately 1 cup)
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 8 slices bacon, cooked and crumbled
  • 2 tablespoons brown sugar
  • 2 cans (28 ounces each) baked beans
  • 1/2 cup (140 g) barbecue sauce
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat Oven and Brown Kielbasa: Preheat oven to 350°F (177°C). In a 4-quart, oven-safe pot (like a Dutch oven) over medium heat, brown the kielbasa slices on both sides. Remove and set aside.
  2. Brown Ground Beef: Add ground beef, onion, bell pepper, garlic salt, and onion powder to the same pot. Cook until the beef is browned. Drain any excess grease.
  3. Combine Ingredients: Add the browned kielbasa, cooked bacon, brown sugar, baked beans, barbecue sauce, and Dijon mustard to the pot. Stir to combine all ingredients.
  4. Bake: Cover the pot and bake in the preheated oven for 1 hour, or until the beans are heated through, bubbly, and thickened.
  5. Serve: Serve the Kielbasa Cowboy Beans warm.

Notes

  • You can use any type of smoked sausage in place of kielbasa.
  • If you don’t have an oven-safe pot, transfer the mixture to a casserole dish before baking.
