- 4 lbs boneless beef short ribs, cut into 3-inch pieces
- Kosher salt and freshly ground black pepper, to taste
- 2–3 tablespoons avocado oil (or vegetable/canola oil), as needed
Instructions
- Prep BBQ Sauce: Make the Cola BBQ sauce and set aside to cool.
- Season and Rest Ribs: Season short ribs generously with salt and pepper. Let rest at room temperature for at least 30 minutes.
- Sear Ribs: Preheat oven to 300°F (150°C). Heat 2 tablespoons of oil in a large skillet over medium-high heat. Sear short ribs in batches until deeply browned on all sides. Transfer to an oven-safe baking dish.
- Braise Short Ribs: Pour cola barbecue sauce over the ribs, ensuring they are coated. Cover tightly with foil. Braise for 3 hours, or until meltingly tender. Remove foil and continue cooking for another 30 minutes, or until slightly crisp and brown on top.
