Description

These Jambalaya Foil Packets are a fun and easy way to enjoy a flavorful Cajun-inspired meal. Each packet is filled with sausage, shrimp, rice, and vegetables, seasoned with Cajun spices, and cooked to perfection on the grill or in the oven.

  • 1 (14-ounce) package kielbasa smoked sausage, sliced into 1/2-inch thick coins
  • 1/2 pound shrimp (31-40 count), peeled and deveined, tails off (thawed if frozen)
  • 1/4 cup olive oil
  • 1 (15-ounce) can petite diced tomatoes with garlic and oregano, drained
  • 1 medium sweet onion, chopped
  • 1 medium red bell pepper, chopped
  • 2 ribs celery, chopped
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons Cajun seasoning
  • 2 tablespoons finely chopped fresh parsley
  • Kosher salt and pepper, to taste
  • 1 cup instant rice (Minute® rice)
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat: Preheat grill or oven to 400 degrees F (200 degrees C).
  2. Prep foil: Cut 5 large sheets of heavy-duty foil (about 12×17 inches). Coat generously with nonstick cooking spray.
  3. Combine ingredients: In a large bowl, combine all ingredients.
  4. Assemble packets: Divide the mixture evenly among the foil sheets. Fold the foil to create sealed packets, leaving some space for steam.
  5. Cook: Place packets on a baking sheet in the oven or on the grill. Cook for 25-30 minutes, or until shrimp is pink, rice is cooked, and vegetables are tender. If grilling, flip packets halfway through.
  6. Serve: Carefully open the foil packets, allowing steam to escape. Let cool slightly before serving.

Notes

  • Instant rice: Use instant rice for proper cooking within the foil packets.
  • Campfire cooking: These packets can also be cooked over hot coals on a campfire, adjusting cooking time as needed.
  • Variations: Add different vegetables, such as corn or zucchini. Adjust the amount of Cajun seasoning to your preference.
