- 1 yellow onion, chopped
- 3 carrots, sliced and quartered
- 2 stalks celery, chopped
- 18 ounces mild Italian sausage, casings removed (6 links)
- 2 cloves garlic, minced
- 5 cups reduced sodium chicken broth
- 2 cans (15 oz each) white beans (cannellini or other), rinsed and drained
- 3 stalks rainbow chard, ribs removed
- Salt and pepper to taste
Instructions
- Sauté vegetables: Heat olive oil in a Dutch oven or large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 4-5 minutes. Season with salt and pepper.
- Brown sausage: Add sausage, breaking it into smaller pieces. Cook until browned. Stir in garlic and sauté until fragrant, about 1 minute. Drain excess fat if needed.
- Simmer: Pour in chicken broth and beans; bring to a boil. Reduce heat to low and add rainbow chard. Simmer until wilted, about 3 minutes. Season to taste.
- Serve: Serve hot with Parmesan flakes and crusty bread.
