Description

Ingredients

  • 1/2 tablespoon olive oil
  • 1 yellow onion, chopped
  • 3 carrots, sliced and quartered
  • 2 stalks celery, chopped
  • 18 ounces mild Italian sausage, casings removed (6 links)
  • 2 cloves garlic, minced
  • 5 cups reduced sodium chicken broth
  • 2 cans (15 oz each) white beans (cannellini or other), rinsed and drained
  • 3 stalks rainbow chard, ribs removed
  • Salt and pepper to taste

Instructions

  1. Sauté vegetables: Heat olive oil in a Dutch oven or large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 4-5 minutes. Season with salt and pepper.
  2. Brown sausage: Add sausage, breaking it into smaller pieces. Cook until browned. Stir in garlic and sauté until fragrant, about 1 minute. Drain excess fat if needed.
  3. Simmer: Pour in chicken broth and beans; bring to a boil. Reduce heat to low and add rainbow chard. Simmer until wilted, about 3 minutes. Season to taste.
  4. Serve: Serve hot with Parmesan flakes and crusty bread.

Notes

Substitutions: Use any white bean (Great Northern, Cannellini, or Baby Lima). Substitute kale or spinach for rainbow chard. Use hot Italian sausage for a spicier stew.
