  • ¼ cup Unsalted Butter
  • ¼ cup All Purpose Flour
  • 2 Garlic Cloves, finely minced
  • ¼ tsp. Cayenne Pepper
  • ½ tsp. Onion Powder
  • ¼ tsp. Smoked Paprika
  • 1 tsp. Spicy Brown Mustard
  • 1 cup Whole Milk
  • ⅔ cup Guinness (or beer of choice)
  • 1 cup Shredded Sharp Cheddar
  • ½ cup Shredded Swiss
  • 1 cup Shredded Monterey Jack

Instructions

  1. Melt Butter and Sauté Garlic. Melt the unsalted butter in a saucepan over medium heat. Add the finely minced garlic and sauté for about 1 minute until fragrant but not browned.
  2. Add Flour and Seasonings. Stir in the all-purpose flour along with cayenne pepper, onion powder, smoked paprika, and spicy brown mustard. Cook the mixture for another minute to remove the raw flour taste and combine flavors.
  3. Incorporate Liquids Slowly. Gradually pour in the whole milk and Guinness beer while continuously whisking to prevent lumps. This creates a smooth base for the dip.
  4. Cook Until Thickened. Continue cooking the mixture over medium heat, whisking constantly until it thickens and begins to bubble gently, indicating proper consistency.
  5. Fold in Cheeses. Reduce heat to low and fold in the shredded sharp cheddar, Swiss, and Monterey Jack cheeses. Stir until all cheeses have melted and the dip is creamy.
  6. Serve Immediately. Serve the dip warm with your choice of pretzel bites, tortilla chips, or fresh vegetables for dipping.

Notes

  • Shred your own cheese rather than using pre-shredded for a creamier, smoother dip as pre-shredded cheese contains anti-caking agents that affect texture.
