This Instant Pot Teriyaki Chicken is a quick and easy way to enjoy a flavorful Asian-inspired meal! Tender chicken breasts are pressure cooked in a delicious teriyaki sauce, then coated in a thickened glaze. Serve over rice and vegetables for a satisfying and healthy dinner.

- 2 lbs boneless, skinless chicken breasts
- 1/2 cup water
- 1 1/2 cups teriyaki sauce (store-bought or homemade)
- 2 tablespoons cornstarch
- Cooked rice, for serving
- Steamed vegetables, for serving
- Optional garnishes: chopped green onions, sesame seeds
Instructions
- Pressure Cook Chicken: Place chicken breasts in the Instant Pot. Pour teriyaki sauce and water over the chicken. Close and seal the lid. Cook on high pressure for 12 minutes, then allow a natural pressure release.
- Thicken Sauce: Remove chicken from the pot and set aside. Set the Instant Pot to “Sautรฉ” mode. Add cornstarch to the sauce and whisk until thickened.
- Combine and Serve: Chop chicken into bite-sized pieces and return to the pot. Stir to coat in the thickened sauce. Serve over cooked rice and steamed vegetables. Garnish with green onions and/or sesame seeds, if desired.
Notes
- You can use boneless, skinless chicken thighs instead of breasts, but adjust cooking time as needed.
- If you prefer a thicker sauce, you can add more cornstarch slurry (equal parts cornstarch and water) to the pot while sautรฉing.
- For a complete meal, serve with steamed broccoli, carrots, and your favorite type of rice.
