- 6 bone-in, skin-on chicken thighs
- 4 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/2 teaspoon chili flakes
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 5 tablespoons butter
- 1/2 cup chopped onion
- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon Italian seasoning
- 1 tablespoon lemon zest
- 1/3 cup low-sodium chicken broth
- 1 tablespoon cornstarch
- 1 tablespoon water
- Fresh chopped parsley and lemon slices, for garnish
- Cooked rice or noodles and roasted vegetables, for serving (optional)
Instructions
- Season Chicken: Combine paprika, chili flakes, salt, and garlic powder. Rub this seasoning mixture onto the chicken thighs.
- Brown Chicken: Set Instant Pot to “Sautรฉ” mode and heat olive oil. Add chicken thighs and cook until golden brown on both sides. Remove chicken and set aside.
- Sautรฉ and Deglaze: Add butter, onion, and minced garlic to the pot. Sautรฉ until fragrant. Add lemon juice and deglaze the pot, scraping up any browned bits. Stir in Italian seasoning, lemon zest, and chicken broth.
- Pressure Cook: Return chicken to the pot. Secure the lid, set the valve to “Sealing,” and cook on high pressure for 7 minutes. Allow a natural pressure release for 5 minutes, then release any remaining pressure manually.
- Thicken Sauce: Remove chicken and set aside. In a small bowl, whisk together cornstarch and water. Add the slurry to the pot and turn on “Sautรฉ” mode. Whisk and heat until the sauce thickens.
- Serve: Return chicken to the pot and coat with the thickened sauce. Garnish with fresh parsley and lemon slices. Serve with rice or noodles and roasted vegetables, if desired.
Notes
- You can use boneless, skinless chicken thighs, but adjust the cooking time accordingly.
- If you don’t have fresh lemon juice, you can substitute with bottled lemon juice.
- For a spicier dish, you can add more chili flakes or a pinch of cayenne pepper.
