This Instant Pot Cheesy Ground Beef and Rice is a quick and easy one-pot meal that’s perfect for busy weeknights! Ground beef, rice, and a medley of vegetables are pressure cooked in a flavorful sauce and then topped with melted cheese for a comforting and satisfying dish.

- 1 lb lean ground beef
- 1 (10.5 oz) can condensed chicken broth
- 2 1/2 cups milk
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons pepper
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 cups long-grain white rice
- 1 (10.75 oz) can condensed tomato soup
- 1 (8.75 oz) can corn, drained
- 2 cups shredded mozzarella and cheddar cheese blend
Instructions
- Brown Beef: Set Instant Pot to “Sauté Normal.” Add butter or oil, then brown ground beef.
- Add Ingredients: Stir in chicken broth, milk, salt, pepper, onion powder, and garlic powder. Add rice and press down to submerge. Top with tomato soup and corn (do not stir).
- Pressure Cook: Secure the lid, set the valve to “Sealing,” and pressure cook on High for 7 minutes.
- Quick Release and Stir: Immediately do a quick release by turning the steam release handle to “Venting.” Remove the lid and stir.
- Add Cheese: Stir in shredded cheese until melted. Serve immediately.
Notes
- This recipe was tested in an 8-quart Instant Pot Duo. Adjust cooking time as needed for different Instant Pot models.
- You can substitute ground turkey or chicken for the ground beef.
- If you don’t have mozzarella and cheddar cheese blend, you can use any type of cheese you like.
