Description

This Instant Pot Cheesy Ground Beef and Rice is a quick and easy one-pot meal that’s perfect for busy weeknights! Ground beef, rice, and a medley of vegetables are pressure cooked in a flavorful sauce and then topped with melted cheese for a comforting and satisfying dish.


Ingredients

  • 1 lb lean ground beef
  • 1 (10.5 oz) can condensed chicken broth
  • 2 1/2 cups milk
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 2 cups long-grain white rice
  • 1 (10.75 oz) can condensed tomato soup
  • 1 (8.75 oz) can corn, drained
  • 2 cups shredded mozzarella and cheddar cheese blend

Instructions

  1. Brown Beef: Set Instant Pot to “Sauté Normal.” Add butter or oil, then brown ground beef.
  2. Add Ingredients: Stir in chicken broth, milk, salt, pepper, onion powder, and garlic powder. Add rice and press down to submerge. Top with tomato soup and corn (do not stir).
  3. Pressure Cook: Secure the lid, set the valve to “Sealing,” and pressure cook on High for 7 minutes.
  4. Quick Release and Stir: Immediately do a quick release by turning the steam release handle to “Venting.” Remove the lid and stir.
  5. Add Cheese: Stir in shredded cheese until melted. Serve immediately.

Notes

  • This recipe was tested in an 8-quart Instant Pot Duo. Adjust cooking time as needed for different Instant Pot models.
  • You can substitute ground turkey or chicken for the ground beef.
  • If you don’t have mozzarella and cheddar cheese blend, you can use any type of cheese you like.
