Description

Ina Garten’s Summer Garden Pasta is a delightful and fresh pasta dish that celebrates the flavors of summer. Bursting with cherry tomatoes, garlic, basil, and a hint of red pepper flakes, this pasta is simple yet incredibly flavorful. Tossed with angel hair pasta and finished with a generous sprinkle of Parmesan cheese, it’s a perfect dish for a light and satisfying meal.

Ingredients

Units Scale

For the Pasta:

  • 4 pints cherry tomatoes, halved
  • Great quality extra virgin olive oil
  • 2 tablespoons (6 cloves) garlic, minced
  • 18 large basil leaves, julienned, plus extra for serving
  • 1/2 to 1 teaspoon crushed red pepper flakes
  • Kosher salt and freshly cracked black pepper, to taste
  • 1 lb. dried angel hair pasta
  • Freshly grated Parmesan cheese, plus extra for serving

Instructions

  1. Prepare the Pasta: Cook the angel hair pasta according to package instructions until al dente. Drain well.
  2. Sauté the Tomatoes: In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Add cherry tomatoes, basil, red pepper flakes, salt, and pepper. Cook until tomatoes are slightly softened.
  3. Combine: Add the cooked pasta to the skillet with the cherry tomatoes. Toss well to combine.
  4. Finish: Sprinkle with Parmesan cheese and additional basil leaves. Toss again.
  5. Serve: Serve hot, garnished with extra Parmesan and basil, if desired.

Notes

  • Consider saving some pasta water to add moisture if needed.
  • A touch of reserved pasta water can help prevent the dish from being too dry.
