For the Pasta:
- 4 pints cherry tomatoes, halved
- Great quality extra virgin olive oil
- 2 tablespoons (6 cloves) garlic, minced
- 18 large basil leaves, julienned, plus extra for serving
- 1/2 to 1 teaspoon crushed red pepper flakes
- Kosher salt and freshly cracked black pepper, to taste
- 1 lb. dried angel hair pasta
- Freshly grated Parmesan cheese, plus extra for serving
Instructions
- Prepare the Pasta: Cook the angel hair pasta according to package instructions until al dente. Drain well.
- Sauté the Tomatoes: In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant. Add cherry tomatoes, basil, red pepper flakes, salt, and pepper. Cook until tomatoes are slightly softened.
- Combine: Add the cooked pasta to the skillet with the cherry tomatoes. Toss well to combine.
- Finish: Sprinkle with Parmesan cheese and additional basil leaves. Toss again.
- Serve: Serve hot, garnished with extra Parmesan and basil, if desired.
