Description

This Honey Mustard Chicken is an easy and flavorful dish that’s perfect for a quick weeknight meal. Tender chicken thighs are baked in a sweet and savory honey mustard sauce with a hint of fresh thyme.


Ingredients

  • 2 1/4 pounds boneless, skinless chicken thighs (about 8 thighs)
  • Salt and pepper, to taste
  • 1/2 cup Dijon mustard
  • 1/2 cup honey
  • 2 tablespoons extra virgin olive oil
  • 3 sprigs fresh thyme
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat and Prep: Preheat your oven to 400 degrees F. Coat a 9×13 inch baking dish with nonstick cooking spray.
  2. Make Sauce: In a small bowl, whisk together the mustard, honey, and olive oil.
  3. Season and Bake Chicken: Place chicken in a single layer in the baking dish and season with salt and pepper to taste on both sides. Pour the honey mustard mixture over them, turning the thighs in the mixture to ensure they are completely coated with the sauce. Place the thyme sprigs in between the pieces of chicken. Bake for about 30 minutes (or until an instant-read thermometer registers 165 degrees F), basting the tops of the chicken with more sauce halfway through.
  4. Serve: Remove from the oven and let the chicken rest for 5 minutes before serving. Serve with some extra sauce over the top. Sprinkle with a bit of fresh chopped parsley, if desired.

Notes

  • Chicken: You can use boneless, skinless chicken breasts instead of thighs. If using chicken breasts, pound each chicken breast to a little more than ¾-inch at the thickest part and bake between 23-27 minutes. The size and thickness of the breasts will determine the bake time. They are finished cooking when the internal temperature reaches 165 degrees F.
  • Storage: Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
