Description

This Healthy Ranch Chicken Salad is a delightful mix of tender chicken, fresh veggies, and a creamy homemade ranch dressing. It’s a perfect dish for a light and satisfying meal.


Ingredients

For the Salad:

  • 1 pound Chicken Breast, cut into small bite-sized pieces
  • 1 tablespoon Olive Oil
  • 4 cups Packed Greens of choice
  • 1/4 Small Red Onion, sliced
  • 3/4 cup Cherry or grape tomatoes, halved
  • 1/2 English Cucumber, sliced or chopped
  • 1 Avocado, sliced
  • 1/3 cup Corn, Fresh or canned

For the Homemade Ranch Dressing:

  • 1 cup Plain non-fat Greek yogurt
  • 2-3 Cloves Garlic, minced
  • 2 teaspoons Lemon Juice
  • 2 tablespoons Onion, finely chopped
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Fresh chives, finely chopped
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 tablespoon Fresh dill, finely chopped
  • Sea salt and pepper, to taste

Instructions

  1. Make the Homemade Ranch Dressing: Add all the dressing ingredients to a small jar, close the lid, and shake well to emulsify.
  2. Marinate the Chicken: Coat the chicken with 1/3 of the dressing and marinate for at least 15 minutes. Refrigerate the remaining dressing.
  3. Cook the Chicken: Heat oil in a pan, cook the chicken until golden and cooked through, about 5-7 minutes.
  4. Assemble the Salad: In a bowl, combine greens, onion, tomatoes, cucumber, avocado, and corn. Toss with dressing before serving.

Notes

  • Chicken: You can use chicken thighs or shrimp as alternatives.
  • Feel free to add extra veggies like olives, but note it will change the calorie count.
  • If you prefer, you can use store-bought Ranch dressing instead of making it from scratch.
