Calzone Filling
- 1/2 cup pepperoni, sliced small (plus an additional 8-10 slices for hat decoration)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup Parmesan cheese, grated
- 4 ounces cream cheese, softened
- 1/4 cup sautéed peppers &; onions (optional)
- 1/2 cup cooked Italian sausage (optional)
Calzone Dough
- 2 packages crescent rolls (8 ounces each)
Seasonings & Wash
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1 egg, slightly beaten
- 1 tablespoon water
Serving
- Marinara sauce, served warm
Instructions
- Preheat and Prepare: Preheat your oven to 425°F and line a baking sheet with parchment paper or a silicone baking mat. If using, cook the Italian sausage and sauté the peppers and onions until done.
- Prepare Pepperoni: Slice ½ cup of pepperoni into small pieces for the filling, and set aside an additional 8-10 slices cut into fun shapes like diamonds, triangles, and crescent moons to decorate the calzone hats.
- Mix Seasonings: In a small bowl, combine the kosher salt, black pepper, and Italian seasoning to create a seasoning blend.
- Make Filling Mixture: In a medium bowl, mix together the softened cream cheese, shredded mozzarella, grated Parmesan, sautéed peppers and onions, cooked Italian sausage, small sliced pepperoni, and sprinkle in a generous amount of the seasoning mixture. Stir well until fully combined.
- Prepare Crescent Roll Dough: Unroll the crescent rolls into separate triangles. Place four triangles on the prepared baking sheet, reserving the other four to be the top layers of the calzones. If using two baking sheets, distribute evenly. Keep dough cool to prevent tearing.
- Apply Egg Wash: Beat the egg with the water in a small bowl. Brush the edges of the crescent roll triangles on the baking sheet with the egg wash to help seal the calzones.
- Assemble Calzones: Spoon about 1½ to 2 tablespoons of the cheese and meat mixture onto the center of each crescent roll bottom. Cover each with a reserved crescent roll triangle, gently pressing edges to seal the filling inside.
- Create Witch Hat Shape: Fold up the bottom edge of each calzone to form the brim of a witch’s hat and shape the tip of the hat for a more authentic look.
- Decorate and Season: Brush the tops with additional egg wash. Place the shaped pepperoni pieces onto the brim of each hat, then sprinkle the remaining seasoning mixture over the hats for extra flavor.
- Bake: Bake in the preheated oven for 8-10 minutes or until the calzones are golden brown. Optionally, sprinkle with more grated Parmesan cheese right after baking.
- Serve: Warm the marinara sauce in the microwave in short 15-second intervals until heated, then serve alongside the witch hat calzones for dipping.
Notes
- Using parchment paper or a silicone baking mat promotes even baking, prevents sticking, and makes cleanup easier. Silicone mats are reusable and environmentally friendly.
- To soften cream cheese quickly, place it on the counter for 20-30 minutes or microwave on high for 15-20 seconds on a microwave-safe plate.
- Keep the second package of crescent rolls refrigerated until ready to use as cold dough is easier to handle without tearing.
- Check the crescent roll triangle sizes ahead of time to pair smaller bottoms with smaller tops to ensure a good fit.
