Description

 This Guinness Cottage Pie is a hearty and flavorful twist on a classic comfort food! A rich and savory beef filling with a hint of Guinness is topped with creamy mashed potatoes for a satisfying and easy-to-make meal.

Beef Filling:

  • 1 pound ground beef (85/15 or leaner)
  • 1 medium onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 8 ounces Guinness beer (or beef broth)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1/4 teaspoon dried thyme
  • 2 cups frozen peas and carrots

Mashed Potatoes:

  • 2 pounds russet potatoes, peeled and halved or quartered
  • 1/2 cup heavy cream or milk
  • 1/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional garnish: chopped fresh parsley

Instructions

  1. Prepare for Cooking: Preheat oven to 350°F (177°C). Start cooking potatoes (see Mashed Potatoes instructions below) while preparing the meat filling.
  2. Make Meat Filling: In a 10-inch oven-safe skillet, brown ground beef with diced onion over medium heat. Season with salt and pepper. Add butter and garlic; cook until fragrant. Stir in flour, then add Guinness, Worcestershire sauce, tomato paste, and thyme. Add frozen peas and carrots. Remove from heat.
  3. Make Mashed Potatoes: Boil potatoes until tender. Drain and return to the pot. Mash with heavy cream or milk until smooth. Stir in butter, salt, and pepper.
  4. Assemble and Bake: Spread mashed potatoes evenly over the meat filling in the skillet. Bake uncovered for 30 minutes, or until heated through and bubbly.
  5. Serve: Garnish with chopped parsley, if desired, and serve hot.

Notes

  • To prevent spills, place a sheet of foil on the lower oven rack to catch any drips.
  • Guinness beer can be substituted with beef broth.
  • If you don’t have an oven-safe skillet, transfer the meat filling to a 2-quart baking dish before topping with mashed potatoes.
  • Leftovers can be refrigerated for up to 3-4 days.
