This Grilled BBQ Chicken Pizza is a fun and flavorful twist on a classic! Tender chicken, a smoky BBQ sauce, and a blend of cheeses are grilled to perfection on a crispy crust. It’s a delicious and easy-to-make pizza that’s perfect for a summer cookout or a casual pizza night.

- 1 premade pizza dough (from the grocery store), room temperature
- 1 1/2 cups cooked chicken, shredded
- 1/2 cup plus 2 tablespoons BBQ sauce, divided
- 1 1/4 cups shredded mozzarella cheese, divided
- 1 1/4 cups shredded Gouda cheese, divided
- 1/2 cup thinly sliced red onion
- Fresh cilantro, for garnish
Instructions
- Prepare Dough: On a floured pizza stone or rimless baking sheet, stretch pizza dough into your desired shape. Let rest for 10 minutes and stretch again.
- Preheat Grill: Preheat grill to high heat. Grease grates with nonstick spray or oil.
- Grill Dough: Place dough directly on the grill, close the lid, and cook for 5 minutes.
- Flip and Add Toppings: Remove dough from grill and flip so the grilled side is facing up. Brush the grilled side with ½ cup BBQ sauce. Sprinkle with half of the mozzarella and Gouda cheese.
- Add Chicken: In a bowl, combine shredded chicken with remaining BBQ sauce. Spread the chicken mixture over the cheese.
- Finish and Grill: Top with red onion slices and remaining cheese. Grill for another 4-5 minutes, or until the crust is cooked through and the cheese is melted and bubbly.
- Rest and Serve: Remove from grill and let rest for a few minutes before slicing and serving. Garnish with fresh cilantro.
Notes
- You can use any type of premade pizza dough you like.
- If you don’t have a pizza stone, you can use a rimless baking sheet or a grill-safe pan.
- Feel free to add your favorite pizza toppings, such as peppers, onions, or mushrooms.
