- 8 ounces canned green chilis
- 2 cups shredded cheddar cheese, divided (reserve 1/2 cup for topping)
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley (or cilantro)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the casserole.
- Mix Ingredients: In a large bowl, combine the cooked white rice, canned green chilis, 1½ cups of shredded cheddar cheese, sour cream, garlic powder, salt, and black pepper. Stir thoroughly until the mixture is well combined and creamy.
- Prepare Baking Dish: Spray a 9″ x 13″ baking dish with nonstick cooking spray to prevent sticking. Then, evenly spread the rice mixture into the bottom of the dish.
- Add Cheese Topping: Sprinkle the reserved 1/2 cup of shredded cheddar cheese evenly over the top of the rice mixture for a golden cheesy crust.
- Bake: Place the casserole in the preheated oven and bake for approximately 20 minutes, or until the mixture is bubbly and the cheese on top is lightly golden brown.

Notes
- To reheat in the oven, allow the casserole to come to room temperature by sitting out for about 30 minutes. Then preheat the oven to 325°F, cover the dish with foil, and heat for approximately 15 minutes until warmed through.
