Donut Batter

  • 1 scoop Jay Robb Vanilla Whey Protein
  • 6 tbsp almond flour
  • 1/4 cup coconut flour
  • 2 tbsp light brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • Pinch of nutmeg and ground ginger
  • 3/4 cup grated carrots
  • 1/4 cup unsweetened vanilla almond milk
  • 2 tbsp coconut oil, melted
  • 1 egg
  • 1/2 tsp vanilla extract
  • Optional: 1/4 cup chopped raisins or pecans

Glaze

  • 1/2 cup powdered sugar
  • 3 tbsp unsweetened vanilla almond milk
  • 1 tbsp Jay Robb Vanilla Whey Protein
  • 1/4 tsp apple cider vinegar

Instructions

  1. Preheat the Oven
    Preheat your oven to 350ยฐF (175ยฐC). Grease a donut baking pan with solid coconut oil (this works better than cooking spray) and set aside.
  2. Prepare the Donut Batter
    In a large mixing bowl, combine all the dry ingredients for the donut batter. Then, add the wet ingredients to the mixture and stir until well combined. Scoop the batter into a plastic bag, trim the tip off, and pipe the dough into the prepared donut pan.
  3. Bake the Donuts
    Place the pan in the oven and bake for 15-18 minutes, or until the donuts are just starting to brown on top and a toothpick inserted into the center comes out clean.
  4. Cool the Donuts
    Carefully remove the donuts from the pan and transfer to a wire rack. Allow them to cool completely.
  5. Prepare the Glaze
    In a small bowl, whisk together all the glaze ingredients until smooth. Once the donuts have cooled, dip each one into the glaze and place them back on the wire rack to let the glaze set.

Notes

  • For a more traditional glaze, omit the whey protein from the glaze mix. This will allow it to harden and set more like a classic glaze.
  • The apple cider vinegar in the glaze adds a subtle tang, reminiscent of cream cheese frosting.
  • Opt for a good-quality donut pan for the best results.
