These Garlic Roasted Potatoes are a simple yet flavorful side dish that’s perfect for any meal! Baby gold potatoes are roasted to crispy perfection with garlic, herbs, and a touch of salt and pepper.

- 1 1/2 pounds baby gold potatoes, scrubbed and dried
- 2 tablespoons extra virgin olive oil
- 3/4 teaspoon kosher salt, divided
- 1/4 teaspoon ground black pepper
- 6 cloves garlic, minced
- Chopped fresh chives or parsley, for serving (optional)
Instructions
- Preheat and Prep: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut and Season Potatoes: Cut potatoes in half or quarters. Toss with olive oil, ½ teaspoon salt, and pepper.
- Roast: Spread potatoes cut-side down on the baking sheet. Roast for 35 minutes.
- Add Garlic: Remove from oven and sprinkle with minced garlic. Toss and spread potatoes in an even layer. Rotate the pan and bake for 5-10 minutes more, until golden brown and crisp.
- Season and Serve: Toss with remaining salt and chives (if using). Let cool slightly and serve hot.
Notes
- Storage: Refrigerate leftovers in an airtight container for up to 4 days. Freezing is not recommended.
- Reheating: Reheat in a 400°F (200°C) oven for best results. Microwaving is also an option, but the potatoes won’t be as crispy.
