Description

These Garlic Parmesan Chicken Thighs are incredibly crispy and flavorful, perfect for a quick and satisfying meal! Bone-in, skin-on chicken thighs are coated in a savory parmesan and spice blend, then baked to golden perfection.

Ingredients

Scale
  • 5 bone-in, skin-on chicken thighs
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons baking powder
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat and Prep: Preheat oven to 425°F (220°C). Use convection or air fryer setting if available. Line a baking sheet with parchment paper or aluminum foil sprayed with cooking oil.
  2. Dry Chicken: Thoroughly pat chicken thighs dry with paper towels to remove excess moisture.
  3. Mix Spices: In a small bowl, combine Parmesan cheese, baking powder, Italian seasoning, paprika, garlic powder, salt, and pepper.
  4. Season Chicken: Rub the spice mixture evenly over each chicken thigh. Place thighs on the baking sheet, leaving space between each piece.
  5. Bake: Bake for 30-40 minutes, using convection or air fryer setting if available. If not, baking may take a few extra minutes. For boneless thighs, start checking for doneness after 25 minutes.
  6. Check Doneness: Chicken is fully cooked when it reaches an internal temperature of 165°F (74°C) and juices run clear. Baste with pan juices.
  7. Extra Crispy (Optional): For extra crispiness, broil for 1-2 minutes, watching carefully to prevent burning.
  8. Wire Rack (Optional): Cook on a wire rack placed on the baking sheet for slightly crispier skin. Line the pan with foil for easy cleanup.

Notes

  • Do not substitute baking soda for baking powder.
  • Leave some fat on the chicken thighs for juicier meat.
  • Boneless chicken thighs will cook faster.
  • A meat thermometer is very helpful.
