Description

This Garlic Butter Steak Bites and Potatoes recipe offers a delicious and easy-to-make meal featuring tender sirloin steak cubes seared in a flavorful garlic butter sauce paired with perfectly cooked, crispy-on-the-outside, tender-on-the-inside Yukon Gold potatoes. Infused with rosemary and oregano, this skillet dish is a satisfying and hearty dinner option that is both comforting and full of savory flavors.

Ingredients

Units Scale

For the Potatoes:

  • 1 lb. Yukon Gold potatoes, diced into 1/2-inch cubes (or red-skinned or fingerling potatoes)
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/2 tsp ground pepper
  • 1 tbsp olive oil

For the Steak and Finishing:

  • 1 1/2 lbs. sirloin steak, cut into 1-inch cubes (alternative options: beef tenderloin, NY strip steak, or stir fry meat)
  • 4 tbsp unsalted butter, divided (1/2 stick)
  • Freshly chopped parsley, optional for garnish

Instructions

  1. Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely and start to sizzle.
  2. Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes for about 4 minutes without stirring to develop a crispy exterior. Stir the potatoes and continue cooking for another 3-4 minutes until they are fork tender. Once cooked, remove the potatoes from the skillet and set them aside in a bowl.
  3. Sear the steak bites: Increase the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted. Add the steak cubes in a single layer and cook for 1 minute without moving them to allow a good sear. Flip or stir the steak bites and cook for an additional 1-2 minutes or until they reach your desired level of doneness. Remove the skillet from heat.
  4. Toss potatoes and steak together: Add the cooked potatoes back into the skillet with the steak bites. Toss everything together gently to combine and heat through evenly. Adjust seasoning by adding extra salt and pepper if desired.
  5. Garnish and serve: Sprinkle freshly chopped parsley over the dish for a fresh burst of color and flavor, if using. Serve immediately and enjoy your garlic butter steak bites with potatoes!

Notes

  • If potatoes are not tender after 8 minutes but are browning too quickly, reduce heat to medium-low, add 2 tablespoons of warm water, cover the skillet, and cook for an additional 3-4 minutes until the water evaporates and potatoes soften.
  • Avoid overcrowding the pan to ensure even cooking and proper searing; crowding may cause steaming instead.
  • Use a meat thermometer to check steak doneness: rare (125-130°F), medium-rare (130-140°F), medium (140-150°F), medium-well (150-160°F), well-done (160-165°F).
