  • 4 (8-oz) boneless, skinless chicken breasts
  • 2 teaspoons sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 small white onions (or 1 1/2 large onions), peeled and sliced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup dry white wine
  • 1/2 cup reduced-sodium chicken broth
  • 4 slices Swiss cheese
  • 1/3 cup Parmesan cheese, shredded

Instructions

  1. Preheat and Prep: Preheat oven to 400ยฐF (205ยฐC). Pat chicken breasts dry and season with salt and pepper.
  2. Sear Chicken: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side, until golden. Remove and set aside.
  3. Caramelize Onions: Reduce heat to medium. Add butter and onions to the skillet. Cook, covered, for 5 minutes, then uncover and stir in thyme. Continue cooking until onions are caramelized (10-15 minutes).
  4. Deglaze and Simmer: Pour in wine and broth, scraping the bottom of the pan to deglaze. Bring to a simmer.
  5. Add Chicken and Cheese: Return chicken to the skillet and coat in the sauce. Top each chicken breast with a slice of Swiss cheese and sprinkle with Parmesan cheese.
  6. Bake: Transfer the skillet to the oven and bake for 10 minutes, or until cheese is melted and golden brown.

Notes

  • If you donโ€™t have an oven-safe skillet, you can transfer the chicken and onion mixture to a baking dish before topping with cheese and baking.
