Scale
- 4 boneless, skinless chicken breasts
- 3 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup beef broth
- 1/2 cup dry white wine
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded Gruyère cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Caramelize Onions: In a large skillet, heat the butter over medium heat. Add the thinly sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are deeply caramelized. If the onions start to stick, add a splash of water or beef broth.
- Add Flavorings: Add the minced garlic, sugar, and balsamic vinegar, and cook for another 2-3 minutes.
- Deglaze and Simmer: Pour in the white wine and beef broth. Let it simmer for about 5 minutes until half of the liquid is absorbed. Season with salt and pepper.
- Preheat and Sear Chicken: Preheat your oven to 375°F. Remove the onion mixture from the skillet and set aside. Season the chicken breasts with salt and pepper on both sides. Using the same skillet on medium-high heat, add the olive oil and sear the chicken breasts until golden brown on each side. 2-3 minutes per side is all you need. Remove from heat.
- Assemble: Spread the caramelized onions evenly over the seared chicken breasts. Sprinkle the shredded Gruyère cheese evenly over the onions and chicken.
- Bake: Transfer the oven-safe skillet or baking dish to the preheated oven and bake for 20-25 minutes, until the chicken is cooked through (internal temperature of 165°F) and the cheese is melted and bubbly.
- Serve: Remove from the oven and garnish with fresh chopped parsley.
Notes
- Caramelizing Onions: Caramelizing onions requires patience. Cook them slowly over medium heat to bring out their natural sweetness and flavor.
- Wine Substitute: If you prefer not to use wine, simply replace it with additional beef broth for the deglazing step.
- Oven-Safe Dish: If your skillet is not safe for the oven, transfer the chicken, onions, and cheese to an oven-safe baking dish along with the juices.
- Storage: Store any leftovers in the refrigerator in an airtight container for up to 3 days.
