Description

 This Fiesta Chicken Pasta Casserole is a vibrant and cheesy dish that’s perfect for a festive meal! It combines tender chicken, a medley of vegetables, and a creamy sauce, all baked with pasta and a generous layer of cheese.


Ingredients

  • 8 ounces uncooked pasta (such as penne or rotini)
  • 3 cups cooked chicken, shredded
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 cup sour cream
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 3/4 cup sliced black olives, divided
  • 1 (7 ounce) can diced green chilies, drained
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic salt
  • 2 cups shredded Mexican cheese blend, divided
  • Fresh cilantro, for garnish

Instructions

  1. Preheat and Cook Pasta: Preheat oven to 350°F (177°C). Cook pasta according to package directions until al dente. Drain and set aside.
  2. Combine Ingredients: In a large bowl, combine shredded chicken, Rotel, sour cream, corn, black beans, ½ cup black olives, green chilies, cream of chicken soup, cumin, garlic salt, and 1 cup of the Mexican cheese blend. Mix well.
  3. Add Pasta: Stir in the cooked pasta until well combined.
  4. Bake: Pour the mixture into a greased 9×13 inch baking dish. Top with remaining cheese. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5 minutes, or until cheese is melted and bubbly.
  5. Serve: Garnish with remaining black olives and fresh cilantro. Serve hot.

Notes

  • You can use any type of cooked chicken you like, such as rotisserie chicken or leftover grilled chicken.
  • If you don’t have Mexican cheese blend, you can use a combination of your favorite cheeses, such as cheddar, Monterey Jack, or queso fresco.
  • This casserole can be easily customized with your favorite vegetables, such as bell peppers, onions, or mushrooms.
