- 8 ounces uncooked pasta (such as penne or rotini)
- 3 cups cooked chicken, shredded
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 cup sour cream
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, drained and rinsed
- 3/4 cup sliced black olives, divided
- 1 (7 ounce) can diced green chilies, drained
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 teaspoon ground cumin
- 1 teaspoon garlic salt
- 2 cups shredded Mexican cheese blend, divided
- Fresh cilantro, for garnish
Instructions
- Preheat and Cook Pasta: Preheat oven to 350°F (177°C). Cook pasta according to package directions until al dente. Drain and set aside.
- Combine Ingredients: In a large bowl, combine shredded chicken, Rotel, sour cream, corn, black beans, ½ cup black olives, green chilies, cream of chicken soup, cumin, garlic salt, and 1 cup of the Mexican cheese blend. Mix well.
- Add Pasta: Stir in the cooked pasta until well combined.
- Bake: Pour the mixture into a greased 9×13 inch baking dish. Top with remaining cheese. Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5 minutes, or until cheese is melted and bubbly.
- Serve: Garnish with remaining black olives and fresh cilantro. Serve hot.
Notes
- You can use any type of cooked chicken you like, such as rotisserie chicken or leftover grilled chicken.
- If you don’t have Mexican cheese blend, you can use a combination of your favorite cheeses, such as cheddar, Monterey Jack, or queso fresco.
- This casserole can be easily customized with your favorite vegetables, such as bell peppers, onions, or mushrooms.
- Serve with avocado slices and salsa for a complete meal.
