Description

This Fiesta Chicken Casserole is a quick and easy weeknight meal that’s packed with flavor. It features tender chicken, pasta, black beans, corn, and a creamy sauce, all topped with melted cheese.


Ingredients

  • 2 1/2 cups uncooked rotini pasta
  • 1 cup sour cream
  • 1 cup salsa
  • 1 packet mild taco seasoning
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 1/2 cups cooked chicken, shredded or cubed
  • 2 cups shredded cheese (such as Colby Jack)

Instructions

  1. Preheat and Cook Pasta: Heat the oven to 350°F. Prepare a 9×13 baking dish and spray with cooking spray. Set aside. Cook pasta to al dente according to package directions, adding about 1 teaspoon of salt to the pasta water.
  2. Combine Sauce Ingredients: While the pasta is cooking, combine sour cream, salsa, taco seasoning, cumin, garlic powder, and onion powder in a large mixing bowl.
  3. Add Pasta and Other Ingredients: Drain the pasta (do not rinse) when it’s done cooking and add it to the sour cream mixture. Stir to combine. Add the corn, black beans, chicken, and 1 cup of the shredded cheese. Stir together to combine.
  4. Assemble and Bake: Pour into the baking dish and sprinkle the remaining cheese on top. Cover with tin foil and bake for 20 minutes. Take the tin foil off and let cook an additional 5 minutes.
  5. Serve: Garnish with sour cream, tomato, chopped cilantro, and avocado slices, if desired.

Notes

  • Cheese: Use any cheese you like! Colby Jack, Monterey Jack, Pepper Jack, or Cheddar are all good options.
  • Salsa: Use your favorite salsa.
  • Spicy Version: Add cayenne pepper or chili powder, use a packet of hot taco seasoning, top with jalapeño slices, or add a can of diced green chilies to the casserole.
  • Storage: Leftovers keep well, covered, in the fridge for 3-4 days.
