This Fajita Stuffed Chicken is a flavorful and satisfying dish that’s ready in just 30 minutes! Tender chicken breasts are filled with a classic fajita mixture of bell peppers, onions, and cheese, then seared and baked to perfection.   • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1620 ounces boneless, skinless chicken breasts
  • 2 teaspoons taco seasoning
  • 1 cup shredded Monterey Jack cheese
  • 1 lime, cut into wedges (for serving)

Instructions

  1. Preheat and Sauté Vegetables: Preheat oven to 350°F (177°C). Heat olive oil in a cast-iron skillet over medium heat. Add diced bell pepper and onion; cook until softened and lightly browned. Remove from heat and set aside.
  2. Prepare Chicken: Butterfly chicken breasts by slicing through the side, creating a pocket for the filling. Season both sides with taco seasoning.
  3. Stuff and Sear: Fill chicken breasts with the sautéed bell pepper and onion mixture and shredded cheese. Use toothpicks to secure the filling if needed. Add more oil to the skillet, if necessary, and sear the stuffed chicken breasts on both sides until browned.
  4. Bake: Transfer the skillet to the oven and bake for 15-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  5. Serve: Serve hot with lime wedges and your favorite toppings, such as sour cream, guacamole, salsa, or pico de gallo.

Notes

  • You can use any color bell pepper you like.
  • If you don’t have a cast-iron skillet, you can use another oven-safe skillet or transfer the chicken to a baking dish after searing.
  • Adjust the amount of taco seasoning to your preference.
  • Serve the stuffed chicken over a salad, with rice and beans, or with your favorite sides.
