This easy tomato soup with grilled cheese recipe is a comforting classic that’s perfect for a cozy meal. The flavorful homemade tomato soup pairs perfectly with gooey grilled cheese sandwiches for a delicious and satisfying dish.

For the Tomato Soup:

  • 1 1/2 kg (3lbs) Tomatoes, Use ripe, seasonal tomatoes or replace with whole canned tomatoes. San Marzano tomatoes are excellent but any good quality Italian tomatoes can be used.
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 red onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 cup fresh basil leaves, I don't bother chopping the basil as the leaves will be blended.
  • 2 tsp tomato paste
  • 8 cups vegetable / chicken broth
  • 1/2 cup cream
  • Salt & black pepper to taste
  • Fresh basil to serve

For the Grilled Cheese Sandwich:

  • 2 slices bread per person
  • 2 cups grated mozzarella
  • 2 cups grated mature cheddar
  • Butter

Instructions

  1. Preheat the oven: Preheat the oven to 200°C/390°F.
  2. Roast the tomatoes: Place the tomatoes in a roasting tray with balsamic vinegar, olive oil, sugar, and salt. Roast for 25-30 minutes until caramelized.
  3. Sauté onions and garlic: In a pot, sauté onions until translucent. Add garlic, basil, roasted tomatoes, tomato paste, and stock. Simmer for 10 minutes.
  4. Blend the soup: Remove from heat, blend until smooth, add cream, and season.
  5. Make grilled cheese: Fill bread with cheese, butter, and cook until golden brown.
  6. Serve: Serve tomato soup with cream, basil, and grilled cheese sandwiches.

Notes

  • Roasting the tomatoes before blending adds flavor.
  • Complement tomatoes with balsamic vinegar, basil, and garlic.
  • A pinch of chili flakes can add heat.
  • Sugar can balance acidity in tomatoes.
