Yellow Cake:
- 1 box of yellow cake mix (baked in a 13x9 inch pan)
Coffee Soak:
- 1/2 cup freshly brewed coffee or espresso
- 2 tbsp coconut sugar
Mascarpone Frosting:
- 8 oz mascarpone cheese
- 2/3 cup powdered sugar
- 1 cup heavy cream
- 1 tsp vanilla extract or vanilla bean paste
To Finish:
- 2-3 tbsp Cacao powder (for dusting)
Instructions
- Bake the Yellow Cake: Follow the instructions on the yellow cake mix box, then let it cool. Use coupe glasses to cut out individual cake portions.
- Prepare the Coffee Soak: Mix the coffee and coconut sugar until dissolved. Spoon 3 tbsp over each cake round for soaking.
- Make the Mascarpone Frosting: Beat mascarpone and powdered sugar until smooth. Gradually add heavy cream until fluffy. Mix in vanilla extract.
- Assemble the Cakes: Pipe the frosting on top of each soaked cake round. Dust with cacao powder.
- Chill and Serve: Refrigerate the cakes for 30 minutes before serving for the best texture.
