Coffee Soak:

  • 2 tbsp coconut sugar

Mascarpone Frosting:

  • 8 oz mascarpone cheese
  • 2/3 cup powdered sugar
  • 1 cup heavy cream
  • 1 tsp vanilla extract or vanilla bean paste

To Finish:

  • 2-3 tbsp Cacao powder (for dusting)

Instructions

  1. Bake the Yellow Cake: Follow the instructions on the yellow cake mix box, then let it cool. Use coupe glasses to cut out individual cake portions.
  2. Prepare the Coffee Soak: Mix the coffee and coconut sugar until dissolved. Spoon 3 tbsp over each cake round for soaking.
  3. Make the Mascarpone Frosting: Beat mascarpone and powdered sugar until smooth. Gradually add heavy cream until fluffy. Mix in vanilla extract.
  4. Assemble the Cakes: Pipe the frosting on top of each soaked cake round. Dust with cacao powder.
  5. Chill and Serve: Refrigerate the cakes for 30 minutes before serving for the best texture.
