Shrimp Scampi Sauce
- 2 tbsp. olive oil
- 4 tbsp. butter
- 1/2 medium onion, finely diced
- 4 garlic cloves, minced or pressed
- 1 lb. large shrimp, peeled and deveined
- Juice of 2 lemons
- 1/2 cup white wine
- Salt and ground black pepper, to taste
- 4 dashes hot sauce (such as Tabasco), plus more to taste
Pasta and Garnishes
- 8 oz. angel hair pasta
- 1/2 cup grated parmesan cheese
- Chopped fresh basil, to taste
- Chopped fresh parsley, to taste
Instructions
- Prepare the pasta water. Bring a large pot of salted water to a rolling boil and keep it ready for cooking the pasta.
- Cook aromatics and shrimp. In a large skillet over medium heat, heat the olive oil and melt the butter. Add the diced onion and minced garlic and sauté until the onion becomes translucent, about 2 to 3 minutes. Add the peeled and deveined shrimp, stirring and cooking them for approximately 2 minutes until they start to turn pink.
- Add liquids and seasonings. Squeeze the juice of 2 lemons over the shrimp mixture. Pour in the white wine, then season with salt, ground black pepper, and 4 dashes of hot sauce. Stir everything together and reduce the heat to low to let the flavors meld.
- Cook the pasta. Add the angel hair pasta to the boiling water and cook according to package instructions until just al dente, usually about 3-4 minutes. Drain the pasta, reserving 1 to 2 cups of pasta water for thinning the sauce if needed.
- Combine pasta and shrimp sauce. Remove the skillet from heat and add the drained pasta to the shrimp mixture. Toss thoroughly to combine, adding reserved pasta water a splash at a time if the sauce needs thinning. Taste and adjust seasonings with more salt and pepper if necessary.
- Serve and garnish. Plate the shrimp scampi pasta, then sprinkle with grated parmesan cheese and garnish with chopped fresh basil and parsley. Serve immediately for best flavor and texture.
