Shrimp Scampi Sauce

  • 2 tbsp. olive oil
  • 4 tbsp. butter
  • 1/2 medium onion, finely diced
  • 4 garlic cloves, minced or pressed
  • 1 lb. large shrimp, peeled and deveined
  • Juice of 2 lemons
  • 1/2 cup white wine
  • Salt and ground black pepper, to taste
  • 4 dashes hot sauce (such as Tabasco), plus more to taste

  • 8 oz. angel hair pasta
  • 1/2 cup grated parmesan cheese
  • Chopped fresh basil, to taste
  • Chopped fresh parsley, to taste


Instructions

  1. Prepare the pasta water. Bring a large pot of salted water to a rolling boil and keep it ready for cooking the pasta.
  2. Cook aromatics and shrimp. In a large skillet over medium heat, heat the olive oil and melt the butter. Add the diced onion and minced garlic and sauté until the onion becomes translucent, about 2 to 3 minutes. Add the peeled and deveined shrimp, stirring and cooking them for approximately 2 minutes until they start to turn pink.
  3. Add liquids and seasonings. Squeeze the juice of 2 lemons over the shrimp mixture. Pour in the white wine, then season with salt, ground black pepper, and 4 dashes of hot sauce. Stir everything together and reduce the heat to low to let the flavors meld.
  4. Cook the pasta. Add the angel hair pasta to the boiling water and cook according to package instructions until just al dente, usually about 3-4 minutes. Drain the pasta, reserving 1 to 2 cups of pasta water for thinning the sauce if needed.
  5. Combine pasta and shrimp sauce. Remove the skillet from heat and add the drained pasta to the shrimp mixture. Toss thoroughly to combine, adding reserved pasta water a splash at a time if the sauce needs thinning. Taste and adjust seasonings with more salt and pepper if necessary.
  6. Serve and garnish. Plate the shrimp scampi pasta, then sprinkle with grated parmesan cheese and garnish with chopped fresh basil and parsley. Serve immediately for best flavor and texture.
