- 3 pounds boneless, skinless chicken breast, cut into 1-inch pieces
- 5 tablespoons all-purpose flour
- 1 1/2 teaspoons salt, plus more to serve
- 1 teaspoon garlic powder
- 1 cup buttermilk
- 2 cups panko bread crumbs
- 1 cup vegetable or canola oil
Instructions
- Prepare breading stations: In a medium bowl, combine flour, salt, and garlic powder. Pour buttermilk into a separate bowl. Place panko crumbs on a plate.
- Bread chicken: Dredge chicken pieces in flour mixture, then dip in buttermilk, and finally coat in panko crumbs. Transfer to a platter.
- Fry chicken: Heat oil in a deep frying pan over medium heat. Maintain oil temperature at 350°F (175°C). Fry chicken in small batches until golden brown and cooked through (internal temperature of 165°F/74°C).
- Serve: Remove chicken from oil and drain on a paper towel-lined plate. Sprinkle with salt and serve hot with your favorite dipping sauce.
