- 3 pounds sweet potatoes (about 6 medium-sized)
- 1/4 teaspoon salt, plus extra to taste
- 2 tablespoons melted salted butter
- 1/2 cup milk (your choice, 2% recommended)
- 1/4 cup maple syrup
- 1 tablespoon finely minced parsley (optional garnish)
Instructions
- Prep Sweet Potatoes: Rinse and scrub sweet potatoes. Peel and cut into 1-2 inch cubes.
- Steam Sweet Potatoes: Place a steamer basket in a large pot. Add water to the bottom, just below the basket. Add a pinch of salt to the water. Add sweet potato cubes to the basket.
- Cook: Cover and heat over medium-high heat until water bubbles. Steam for 20-30 minutes, or until sweet potatoes are tender when pierced with a fork.
- Mash: Transfer sweet potatoes to a large bowl. Add melted butter, milk, ¼ teaspoon salt, and maple syrup.
- Whip/Mash: Whip with an electric mixer until smooth, or mash with a potato masher.
- Serve: Serve immediately, garnished with parsley (optional).
Notes
- For richer flavor, double the butter or use cream instead of milk.
- Add more milk (up to ¼ cup) for a smoother consistency.
- Use an electric hand mixer, stand mixer, food processor, potato masher, or immersion blender.
- If using an immersion blender, steam the sweet potatoes, drain the water, and blend the potatoes directly in the pot.
