Description

This Easy Crock Pot Potato Soup is a creamy and comforting meal that’s perfect for chilly days. It’s made with simple ingredients and requires minimal effort, thanks to the slow cooker.

Ingredients

Units Scale
  • 2 tablespoons olive oil
  • 1 cup onions, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 4 cups potatoes, peeled and chopped into 1-inch pieces (about 1 lb or 5-6 medium-sized potatoes)
  • 4 cups vegetable broth
  • 1 cup grated cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh rosemary, chopped finely
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk of choice

Instructions

  1. Sauté Vegetables (Optional): In a sauté pan, heat olive oil. While oil is heating, chop veggies. Sauté onions, carrots, and celery until onions are translucent, about 10 minutes. (This step is optional but adds flavor.)
  2. Add Ingredients to Crock Pot: Add all ingredients into the crock pot, except milk and cheese.
  3. Cook: Set the crock pot to cook for 6 hours on high, or 8 hours on low.
  4. Blend and Serve: Once cooked, stir in milk and cheese. Use an immersion blender or regular blender to make the soup smooth. Serve with your favorite toppings like bacon, chives, or cheese.

Notes

  • Potatoes: You can use any type of potato for this recipe, such as Russet, Yukon Gold, or red potatoes.
  • Broth: You can use chicken broth instead of vegetable broth if you prefer.
  • Cheese: Feel free to use your favorite type of cheese.
  • Milk: You can use any type of milk you like, such as whole milk, skim milk, or almond milk.
  • Toppings: Get creative with your toppings! Try adding croutons, sour cream, or shredded cheese.
