Description

These Easy Chicken Enchiladas are a simple and flavorful dish that’s perfect for a quick weeknight meal. They’re made with tender chicken, a homemade enchilada sauce, and plenty of melted cheese, all wrapped in warm tortillas.

  • 1 (12-ounce) can red enchilada sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups shredded cooked chicken
  • 2 1/2 cups shredded cheddar cheese, divided
  • Cooking spray
  • 6 (6-inch) corn tortillas

Instructions

  1. Preheat and prep: Preheat oven to 375°F (190°C). Heat a non-stick skillet over medium-high heat. Grease an 11×7 inch baking dish.
  2. Make sauce: In a bowl, whisk together enchilada sauce, onion powder, garlic powder, cumin, chili powder, coriander, salt, and cayenne pepper (if using). Spread a thin layer of sauce in the baking dish.
  3. Combine filling: In a separate bowl, combine chicken, 1 cup of cheese, and 1/3 cup of the enchilada sauce.
  4. Warm tortillas: Heat tortillas in the skillet for 15-30 seconds per side to prevent cracking.
  5. Fill and roll: Fill each tortilla with about 2 tablespoons of the chicken mixture. Roll tightly and place seam-down in the baking dish.
  6. Bake: Spray the tops of the enchiladas with cooking spray. Bake uncovered for 30 minutes.
  7. Add sauce and cheese: Remove from oven and top with remaining enchilada sauce and cheese. Bake for 10 more minutes, or until cheese is melted and bubbly.
  8. Serve: Serve immediately with your favorite toppings.

Notes

  • You can use different types of cheese, such as Monterey Jack or a Mexican blend.
  • If you don’t have corn tortillas, you can use flour tortillas.
  • Leftovers can be stored in the refrigerator for up to 3 days.
