  • 4 cups (560-660g) fresh sweet cherries, pitted and halved

For the Cobbler Topping:

  • 6 Tablespoons (85g) unsalted butter, cut into 6 pieces
  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (240ml) whole milk
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 1-2 Tablespoons coarse sugar for sprinkling (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (177°C) and place the butter in a baking dish to melt.
  2. Make the batter: Whisk together flour, sugar, baking powder, salt, milk, vanilla, and almond extract until smooth.
  3. Assemble: Spread cherries over melted butter, pour batter on top, sprinkle with coarse sugar.
  4. Bake: Bake for 55–60 minutes until a toothpick comes out clean.
  5. Cool and serve: Let it cool for 5 minutes before serving.

Notes

  • Do not recommend preparing the cobbler unbaked in advance.
  • Baked cobbler freezes well for up to 3 months.
