For the Cherry Filling:
- 4 cups (560-660g) fresh sweet cherries, pitted and halved
For the Cobbler Topping:
- 6 Tablespoons (85g) unsalted butter, cut into 6 pieces
- 1 cup (125g) all-purpose flour (spooned & leveled)
- 3/4 cup (150g) granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup (240ml) whole milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 1-2 Tablespoons coarse sugar for sprinkling (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (177°C) and place the butter in a baking dish to melt.
- Make the batter: Whisk together flour, sugar, baking powder, salt, milk, vanilla, and almond extract until smooth.
- Assemble: Spread cherries over melted butter, pour batter on top, sprinkle with coarse sugar.
- Bake: Bake for 55–60 minutes until a toothpick comes out clean.
- Cool and serve: Let it cool for 5 minutes before serving.
Notes
- Do not recommend preparing the cobbler unbaked in advance.
- Baked cobbler freezes well for up to 3 months.
- Cherry pitter and mixing bowl with pour spout recommended.
