Instructions

  1. Prepare the Scrambled Eggs:
    Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion, green pepper, and ham. Cook until the vegetables are tender and the ham is warmed, about 3-4 minutes. In a separate bowl, whisk together the eggs, milk, and hot sauce. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are light and fluffy.
  2. Preheat the Oven:
    While the eggs are cooking, preheat your oven to 425ยฐF (220ยฐC). Prepare a cookie sheet by covering it with parchment paper or foil.
  3. Prepare the Tortillas:
    Brush one side of each tortilla or pita with olive oil and place them on the prepared baking sheet with the oiled side facing up.
