- 1/2 cup diced carrot (optional)

- 3 (15-ounce) cans black beans, drained
- 1 (15-16 ounce) jar mild salsa
- 1 cup broth (vegetable or chicken)
Instructions
- Sauté Aromatics: Heat olive oil in a large soup pot over medium heat. Add diced onion, oregano, garlic powder, cumin, and a pinch of salt. If using, add diced carrot and celery. Sauté for 3-4 minutes, until onions soften.
- Add Beans and Salsa: Add 2 cans of drained black beans, salsa, and broth to the pot.
- Purée Beans: Purée the remaining can of black beans in a food processor or blender. Add the puréed beans to the pot.
- Simmer: Cook for 20 minutes, until heated through.
